I got the recipe for this salad from Epicurious, so it's not an original creation. But, it's so bright and beautiful and delicious I needed to share it here.
The sweet nuttiness of the roasted carrots and the bitterness of the radicchio is balanced by the bright pop of the vinaigrette and orange slices. And the caramelized onions give this salad a depth that is quite nice.
