Chana Masala

 

INGREDIENTS:

  • 2 medium onions, sliced

  • 4 cloves garlic, smashed

  • 1 3/4” piece of ginger, grated

  • 1 green chili (like Serrano), diced

  • tomato paste

  • 14oz can of whole, peeled tomatoes

  • 7oz dry chickpeas (garbanzo beans)

  • turmeric

  • cumin

  • chili powder

  • garam masala

  • asafetida

  • salt

STEP ONE

Sauté two onions until very brown and caramelized. To promote browning, don’t stir very often.

This should take about 12-15 minutes over medium-high heat. But, if they’re not brown enough, just wait longer.
