Chana Masala
INGREDIENTS:
2 medium onions, sliced
4 cloves garlic, smashed
1 3/4” piece of ginger, grated
1 green chili (like Serrano), diced
tomato paste
14oz can of whole, peeled tomatoes
7oz dry chickpeas (garbanzo beans)
turmeric
cumin
chili powder
garam masala
asafetida
salt
STEP ONE
Sauté two onions until very brown and caramelized. To promote browning, don’t stir very often.
This should take about 12-15 minutes over medium-high heat. But, if they’re not brown enough, just wait longer.
