My favorite brunch spot in Ann Arbor, MI is Café Zola and they had this dish on their specials menu one time and I've been longing for it ever since.
Well, they're not bringing it back, so I had to make it myself. I've made it on a few different occasions, and it's the easiest thing in the world.
For the bread, any bakery bread will do. I like to use a sourdough boule and just slice off a few pieces. I've also used a rosemary olive oil loaf for this and that was amazing. Just stick to savory breads. I wouldn't recommend a cinnamon raisin...
Layer the thick-cut toast with baby swiss cheese, thinly sliced prosciutto, a perfectly fried egg with rich, runny yolk, and top with a bitter green salad dressed in a bright lemon vinaigrette.
It's called a Happy Egg because it is so delicious it's impossible not to smile while you eat it.
